The Buddy


Just popped opened my favorite bottle of red wine, put on Netflix and dived into an ultimate “buddy”. Cheeky you may say this sounds but I’m talking about a chocolate brownie, packed with fudge, drenched in chocolate & decked up with vanilla ice cream. That’s why the world created the word “yummmyyyyyy”.

Growing up in a family of four kids my youngest brother was my closest friend. Ten years apart he was considered the baby (still think he is ;)). I loved cooking for him and enjoyed being a second mom to him. The day he was born he was apparently named after the “buddy bottle” not very sure if that the reason but we ended up calling him buddy ever since. He truly is the definition of a real buddy. The one person who will always be by your side like a shadow. Thus the reason I call this fabulous recipe “the buddy”

In a world where eating chocolate is a big “No-no” I’m going to share some baker mom tips to still enjoy your chocolate cravings and not feel guilty.

The first ingredient on my recipe today is Dark chocolate, made from the seed of the cocoa tree; it is one of the best sources of antioxidants on the planet. Studies show that dark chocolate can improve your health and lower the risk of heart disease. Here I go to grab my second piece of “The Buddy”.

One of the biggest issues we face in eating chocolates is that we don’t realize how often we end up buying the chocolate, which is just topped with sugar. Quality dark chocolate is rich in fiber, iron, magnesium, copper, manganese and a few other minerals. Would you believe it when I say Dark chocolate is actually amazing for your skin?... who knew right. I’m going in for my next chocolate facial appointment after reading this for sure. The flavonols can protect against sun damage, improve blood flow to the skin and increase skin density and hydration. So ladies if your planning your next vacation on a beach side be sure to top your suitcase with some good quality dark chocolate.

The second ingredient on my list today is Greek yogurt. Greek yogurt is packed with Protein, which is essential for good health. It is vital to cell growth, building muscle, and repairing tissue. As you age, you need more protein to keep your skin healthy and to fight off illness. Greek yogurt is a great way to boost your protein levels. “Have it for breakfast with a handful of walnuts and blueberries,” for a complete meal.

While there is always a healthier option for each ingredient we always tend to use the products we know and see commonly in our stores to be less stressed in getting all the ingredients, but its good to be aware of what you eat and to know that eating healthy doesn’t always mean you don’t get to enjoy the yummy treats.

The reason I started my home based operation “ Sugar Mummy’s” was simply because I loved the two words “Sugar” & “Mummy” as a child and I want each of you to feel the same emotion as you try out my recipes in your own homes. The Buddy

  1. ¼ cup almond flour or oat four*
  2. ¼ cup unsweetened cocoa powder
  3. ¼ tsp sea salt
  4. ½ cup bittersweet chocolate, chopped (4 oz)
  5. 2 TBS butter or coconut oil, melted
  6. ½ cup granulated sugar
  7. ¾ cup Vanilla Greek yogurt**
  8. 2 large eggs
  9. 1 tsp vanilla extract
  10. ¼ to ½ cup chocolate chips to mix in

Chocolate fudge sauce:

  1. ½ cup 4 ounces bittersweet chocolate, chopped
  2. ½ cup heavy cream or coconut cream, or half & half
  3. ½ tsp vanilla extract

*Heat up all the above ingredients while whisking for a few minutes over a slow fire for the perfect hot fudge sauce.

  • Preheat oven to 350 degrees grease a 9x9” baking pan and set aside.
  • Mix almond flour, cocoa powder and sea salt in a small bowl; set aside.
  • Melt chocolate & coconut oil/butter together in the microwave. Mix until completely melted. Mix in sugar, Greek yogurt and vanilla. Mix in eggs, one at a time until the batter is completely smooth. Add dry ingredients, whisk until just incorporated. Add chocolate chips. Pour batter into prepared pan and bake for 20 minutes until the top is just barely set and the edges are slightly pulling away from the sides of the pan. When brownies are finished baking, place the pan on a wire rack and cool.

Putting it together:

Start decking up your ultimate buddy with a slice of “The buddy” a scoop of vanilla ice cream & hot chocolate sauce, your can repeated the same layers according to your preference.
