Crab it with both hands!

Words: Salome Jansz

Crabs, renowned worldwide for their unique flavour and tantalizing texture, have long held a cherished position in the realm of gourmet cuisine. Crabs in various presentations enjoy an esteemed status as a true epicurean delight. It is widely agreed that the complexities of enjoying crabs are not only a testament to one's character but are well worth the effort, rewarding diners with an unparalleled gastronomic experience.

In Sri Lanka, where an abundance of seafood thrives, one finds oneself fortunate enough to have access to an array of seafood. Among them, crabs reign supreme, and there is no better place to partake in a fresh and tantalizing crab adventure than The Crab Factory, housed in the Taj Samudra Colombo.

Launched in May 2023, The Crab Factory has swiftly become a must-visit destination for those who adore the exceptional flavours of this crustacean. Guests are given a diverse selection of crab-based dishes to choose from. Each type of crab has its own unique characteristics and flavours, allowing diners to explore and select their preferred crab variety and preparation based on their preferences.

The Lagoon crab, sea crab, and mud crab are all popular choices when it comes to crab cuisine. The Lagoon crab, also known as the freshwater crab, is often prized for its delicate and sweet meat. Sea crabs, found in coastal regions, tend to have a more robust flavour profile. Mud crabs, known for their magnificent claws and meaty body, are sought after for their succulence and richness.

Our experience started by being spoiled with appetizers, curated by the skilled hands of the chef. The crab cocktail, a symphony of balanced flavours and textures, tantalizes your taste buds. Fresh crab flakes, seasoned to perfection, are mixed with olives, egg, avocado, and crunchy lettuce, creating a refreshing and enticing dish. The harmonious composition of ingredients presents a delightful contrast of flavours, ranging from the sweetness of the crab to the tanginess of the olives, and the crispness of the lettuce, ensuring an extraordinary gustatory delight.

We were then offered their signature dish of Moroccan style grilled prawns nestled on a bed of crab couscous. Infused with Moroccan spices, this dish releases a unique and aromatic flavour profile, enhancing the natural essence of the prawn meat.
